The Role

Run the kitchen in the Head Chef’s absence with no drop-in leadership or standard of food entering the restaurant

Assist the Head Chef in the creation of new dishes that are relevant to the restaurant’s style and customers’ expectations.

Ensure knowledge of product, client relationships and services are maintained and communicated to all relevant personnel.

Evaluate performance and product on a regular basis to recognise challenges for the future.

Understand the importance of temperature, cleanliness, and language in the department to ensure the correct ambience is maintained at all times, and to work to the Standard Operational Procedures at all times.

Duties

Ensure all food and drink meets budgeted targets.

Menu Creation in relation with deserts to create a symphony of taste to complement main menu

Maximise average spends by implementing appropriate training and communication systems in the department.

Work closely with the Head Chef and Operations Director to monitor stock movement, to ensure stock security and to adjust prices where necessary to ensure correct margins are met.

PEOPLE

Provide training and development for all kitchen employees.

Develop a close working relationship with all departments, colleagues, and other managers to ensure guest expectations are met.

Foresee and make provision for peaks and troughs in staff levels so that staff shortages are not a common factor.

Ensure the development of all employees within the department to continue to deliver and improve upon the service we offer.

Ensure interview and selection is carried out in a professional manner, in line with company procedure.

Communicate performance and development issues to the Head Chef on a regular basis through the company procedure for appraisals.

Ensure no new member of staff within department is allowed to work without having been properly introduced to the company.

Ensure that the highest standards of personal hygiene, dress, uniform, appearance, body language and conduct of restaurant employees is maintained by your team.
